Polish Easter babka

Polish Easter babka is a traditional easter yeast cake. Our Polish Babka has raisins and can be iced, or simply sprinkled with powdered sugar. It is not only a great dessert, but also an impressive decoration on your table.

These sweet, pillowy yeast buns are generously stuffed with a dark, jammy blueberry filling. Unlike their open-faced Finnish cousins, Jagodzianki encase the fruit inside a soft dough, often finished with a buttery crumble or a simple sugar glaze.

For a seasonal twist, we also have their delicious cousin available, filled with fresh strawberries instead of blueberries!

The Polish butter croissant (Rogal Maślany) is a traditional, crescent-shaped butter roll topped with a generous sprinkle of blue poppy seeds. Unlike a French croissant, which relies on hundreds of thin, flaky layers of laminated dough, the Polish rogal is made from a soft, rich yeast dough. While these fall on the sweet rather than savory side of the bakery, they are only lightly sweetened.

This decadent pastry is a dedicated imitation of the famous St. Martin’s Croissant (Rogal Świętomarciński). The croissant has flavorful filling made from black poppy seeds, a blend of crushed nuts, almonds, and local raisins. To make it even more indulgent, each one is generously topped with a crunchy, sweet mix of almonds, walnuts, and more raisins. It is incredibly rich, sweet, and heavy enough that it is truly perfect for sharing. Although I call it a carrot cake, in fact it’s a treat that bridges the gap between a classic carrot cake, a rich chocolate cake, and a hearty fruit loaf. While it is packed with a generous amount of healthy carrots, it skips the traditional heavy cream cheese icing in favor of a light dusting of powdered sugar. The addition of cocoa powder gives this cake a chocolatey profile. It is loaded with nuts and raisins, and occasionally a bright pop of candied orange zest.

Rosettes are flower-shaped fritters made by dipping a decorative iron into batter and deep-frying it until light and crisp. Their flavor resembles the taste of Finnish tippaleipä or Polish faworki, While traditionally dusted with powdered sugar, they can also be served without any coating to act as a versatile, crunchy base for your own creative sweet or savory toppings.

Our butter cookies are similar to shortbread. They don’t have icing to cut down the amount of sugar. Each cookie is decorated by hand with text and/or pattern. They are perfect as a snack with coffee or tea. The cookies are packed in a nicely decorated box, so they make a great spring gift for friends and family.

This year we offer individually packaged gingerbread cookies, as well as tins, which are a perfect gift for family and friends. Also on request, we can prepare cookies with a thread, so they are ready to be hung on your Christmas tree! Thanks to the traditional recipe and natural ingredients, our gingerbread cookies stay fresh for a very long time.
